Apres Beach Dinner

After a long day at the beach the whole crew is suddenly ravenous.  Leave your bathing suit on and whip up dinner in just a few minutes for an early but satisfying meal with the people you love. 

For snacking:

Cheese, Crackers, and Wolffer Rose

For Dinner:

Farm stand corn & zucchini, teriyaki skirt steak.

Meat: Rinse meat and pat dry.  Tenderize with a tenderizer or fork (poke holes throughout).  Rub salt & pepper into the meat.  Pour Soy Vey teriyaki sauce into a small bowl.  Submerge meat in Soy Vey for as long as you can, but not less than 15 minutes.  When ready, grill 4 minutes per side, pouring remaining Soy Vey sauce on top of meat while grilling.  (Soy Vey is a great marinade for a quick dinner and especially helpful if you're cooking for a lot of people.  Not expensive.  Big flavor punch.)

Corn: Peel back the husks (leaving them attached to the corn) and remove silky hairs.  Put the husks back into place and soak the corn in cold water for a few minutes (to prevent the husks from burning on the grill).  Place on top shelf of grill for 30 minutes.  Serve with butter and salt.

Zucchini: The quickest way to cook up zucchini on the grill is to cut it up into small pieces, dress with olive oil, salt and pepper, and place in an open foil packet on top of the grill (20 minutes).  After it's cooked, mix with fresh chopped basil from the farm stand.

No need for a fancy table setting during an Apres-Beach dinner.  Just bring out plates & cups stuffed with napkins (or papertowels!) and utensils.  If you have a large sized mixing bowl available, set it out for any trash (like eaten-up corn on the cob!).  It'll make for an easier clean up.
